Ingredients:
- 1 large Mason jar with a tight-fitting lid

For the Salad:
- 2 cups thinly sliced or shredded vegetables (carrots, red cabbage, bell peppers, cucumbers, etc.)
- 1-2 cloves garlic, minced
- 1 teaspoon grated ginger (optional)
- 1 tablespoon sea salt

For the Brine:
- 2 cups filtered water
- 1 teaspoon sea salt

Optional Additions:
- Fresh herbs (dill, cilantro, parsley)
- Spices (coriander seeds, mustard seeds)
- Chili flakes for a bit of heat

Instructions:

1. Prepare Vegetables: Wash and prepare the vegetables. Slice or shred them into thin pieces. Place them in a large bowl.

2. Create Brine: In a separate bowl, mix 2 cups of filtered water with 1 teaspoon of sea salt to create the brine. Stir until the salt is dissolved.

3. Pack the Jar: Begin layering the vegetables and optional additions in the Mason jar. Pack them tightly, leaving about 1 inch of space at the top.

4. Add Garlic and Ginger: Sprinkle minced garlic and grated ginger (if using) between the layers of vegetables.

5. Pour Brine: Pour the brine into the jar, ensuring that the vegetables are fully submerged. Leave about 1/2 inch of space at the top.

6. Weigh Down the Vegetables: Place a small, clean weight (such as a smaller jar filled with water) on top of the vegetables to keep them submerged in the brine.

7. Seal Jar: Seal the Mason jar tightly with its lid.

8. Fermentation: Place the jar in a cool, dark place for about 1-2 weeks. Check the taste after the first week, and if it has reached the desired level of fermentation, move it to the refrigerator.

9. Refrigerate: Once fermented to your liking, remove the weight and place the jar in the refrigerator. The cold storage will slow down the fermentation process.
